OATS ENERGY BALLS with just 5 ingredients

You will need –

  • Dates – 1 cup
  • Rolled oats – 1/2 cup
  • Roasted Nuts – 1/2 cup ( I used roasted peanuts)
  • Coconut Oil or any oil of choice – 1 tbsp ( optional, if the dough is dry)
  • Salt – Pinch to balance the sweetness

To make – Soak 1 cup of dates in a bowl of hot water for 15 mins, this will soften the dates and make them plump and juicy. In the meanwhile, add 1/2 cup of rolled oats to a frying pan and lightly toasted the oats for 3-4 mins. Add the toasted oats to a blender or a food processor. Add in the roasted nuts of your choice. Remove the seeds from the soaked dates and add it to the food processor. Next, add in coconut oil and a pinch of salt.

Process everything until you get a sticky dough, which forms into a ball when you press it together. If the mixture is too dry add in more dates or even little water. Take out the mixture from the food processor and place it in the refrigerator for 30 mins ( this will make it easy to roll them into balls). 

Roughly roll the mixture into 1 inch sized balls. Coat the balls in some chopped nuts or desiccated coconut for that extra crunch.
