The pumpkin season is here! Halloween is just around the corner and all we see are pumpkins! All we hear is pumpkin! From pumpkin spice lattes, to pumpkin soups, to pumpkin pies, we should try it all, when the season is on!

Pumpkin Pie

So, here are 6 pumpkin recipes you can try out at home this season!

1. Pumpkin Pie

Ingredients

  • 1 9-inch pie crust (homemade or store-bought)
  • 2 cups pumpkin puree (canned or fresh)
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1.5 cups evaporated milk

Recipe:

Preheat oven to 425 degrees F.

In a large bowl beat the eggs and pumpkin together.  In a separate bowl, combine the sugar, cinnamon, salt, ginger and cloves, and add to pumpkin mixture. Gradually stir in the evaporated milk. Pour the mixture into unbaked pie shell. 

Bake at 425 degrees F for for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes longer, or until the pie is set. Check for doneness by giving the pie a gentle wiggle. It will continue to set as it cools. Or, it is done when a sharp knife inserted in center comes out clean.

Let it cool completely before cutting it into wedges and serving it with a dollop of whipped cream.

2. Pumpkin Spice Cake

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • ½ cup neutral oil
  • 1 tsp vanilla extract
  • 1 cup refined flour
  • 2 tsp pumpkin spice powder
  • 1 cup pumpkin puree
  • 1 tsp baking powder
  • ½ tsp baking soda
  • A pinch of salt

Recipe:

Into a bowl, add in all the wet ingredients and give it a good mix until well combined. Then, sift in the dry ingredients one by one and give it a mix.

Thereafter, pour into a baking tin lined with parchment paper and bake in a pre-heated oven at 350 degrees for about 35 to 45 minutes (or until a poked toothpick comes out clean).

3. Pumpkin Soup

Ingredients:

  • 1 cup pumpkin puree
  • A small bunch of fresh thyme leaves
  • 1 tbsp olive oil
  • 1 small onion
  • 2 cloves garlic
  • Salt to taste
  • ¼ tsp cumin powder
  • Pepper powder to taste
  • A pinch of ginger powder
  • 1 tbsp heavy cream
  • 1 cup vegetable broth

Recipe:

Into a large saucepan, add in the olive oil and let it get heated. Next, add in the onion (finely chopped), along with the garlic (minced) and fry until the onion is translucent. Then, add in the pumpkin puree, thyme, vegetable broth and all the other spices and herbs. Cook on low heat for about 5 to 6 minutes. Turn off the heat, transfer into a bowl, top up with heavy cream and its ready to serve.

4. Pumpkin Spice Latte

Ingredients:

  • 1 shot espresso (¼ cup black coffee)
  • ½ cup milk
  • 2 tbsp pumpkin puree
  • Pinch of cinnamon
  • Pinch of ginger
  • Pinch of nutmeg
  • ¼ tsp vanilla extract
  • Sweetener of choice, to taste (optional)

Recipe:

Into a blender, add in all the ingredients and blend until you get a smooth frothy mixture. Pour into a cup, add in a few ice cubes (optional), drizzle with a pinch of pumpkin spice powder and its ready to consume.

5. Pumpkin Pasta

Ingredients:

  • 200 grams cooked pasta
  • ¼ cup butter
  • ½ onion (chopped)
  • 2 cloves garlic (minced)
  • ½ cup milk
  • ¼ cup vegetable broth
  • 150 grams pumpkin puree
  • Salt and pepper to taste
  • ¼ cup parmesan cheese (grated)
  • 1 cup baby spinach leaves

Recipe:

Into a pot, add in the butter and let it melt. Then, add in the onions and garlic and sauté until the onions are translucent. Next, add in the milk, vegetable broth and pumpkin puree, along with the salt and pepper to taste. Let it come to a simmer. Lastly, add in the cooked pasta and drop in the baby spinach leaves, top it up with the grated parmesan cheese and give it a mix and its ready to serve.

6. Pumpkin Pancakes

Ingredients:

  • ¾ cup refined flour
  • 1/8 cup sugar
  • 1 tsp baking powder
  • A pinch of cinnamon powder
  • A pinch of nutmeg powder
  • ½ cup milk
  • ¼ cup pumpkin puree
  • 1 small egg (beaten)
  • ½ tbsp neutral oil

To serve: (Optional)

  • Maple syrup
  • Pumpkin spice powder

Recipe:

Combine all the wet ingredients in a bowl and give it a good mix until well-combined. Then, sift in all the dry ingredients one by one and thereafter, mix well until properly combined.

Lastly, butter a pan and fry your pancakes like you normally would. To serve, you can drizzle with some maple syrup and a dash of pumpkin spice powder to drizzle.

7. Roasted Pumpkin Seeds

Ingredients:

  • 1 cup pumpkin seeds
  • 2 tsp melted butter
  • salt and pepper to taste

Optional Flavor:
Italian: 2 tablespoon melted butter + 1/4 cup grated Parmesan + 1/2 teaspoon Italian seasoning
Sweet: 2 tablespoons melted butter + 1 tablespoon brown sugar + 1/2 teaspoon cinnamon
Savory: 2 tablespoons melted butter + 1 teaspoon seasoned salt + 1 teaspoon white vinegar
(Note: Add the vinegar after roasting.)
Spicy: 2 tablespoons olive oil + 1/2 teaspoon Cajun seasoning + 1/2 teaspoon fresh lime zest (Note: Add the zest after roasting.)

Recipe –

Heat oven to 350°F. Spread seeds in a single layer in an ungreased 15×10-inch baking pan. Toss with melted butter until coated. Sprinkle with salt and pepper to taste. Bake 15 to 20 minutes or until light golden brown and crisp.
