Yes, from broccoli rice, to tomato rice, chicken rice to egg rice, there are multiple different recipes you can make and in this article, I’ve penned down 6 of my favourites!
Here are 6 best leftover rice recipes to try at home:
1. Turmeric Veggie Rice Recipe
Ingredients:
- 1 small onion chopped
- 3 garlic cloves – minced
- 1/2 cup chopped veggies (broccoli, carrot, peas, bell pepper, green onion)
- 2 cups cooked rice
- Salt and black pepper to taste
- 1 teaspoon turmeric
- 2 tbsp Oil
Method:
Into a pan, pour 1 tbsp of oil and heat it on medium-high heat. Then, add the chopped onions and garlic and let it fry until golden brown. Next, toss in the finely chopped veggies – carrots, frozen peas, bell peppers, broccoli and stir fry for 4-5 mins. Pour more oil if needed and add the turmeric, salt and pepper, sauté for 15 seconds. Finally, add in the rice, give it a mix and it’s ready to eat.
2. Egg Rice Recipe
Ingredients:
- 3 large eggs
- green onion, thinly sliced
- 2 cups cooked rice ( jasmine rice)
- 2-3 teaspoons light soy sauce
- 2 garlic cloves
- Salt to taste
- 1 cup mixed frozen vegetables
(peas, cabbage, bell peppers) ( optional) - 2 tbsp Oil
Method:
Into a frying pan, add some oil, and add beaten eggs. Scramble them for a minute, and set aside. Add 1 tbsp of oil and fry the green onion and garlic for a few seconds. Next, mix frozen vegetables until cooked for 1-2 mins. Next, add the rice and keep mixing for 1-2 minutes. Add some soy sauce. Sprinkle some salt to taste if required. Add in the scrambled eggs and stir it to mix. Finish with a light drizzle of sesame oil.
3. Chicken Fried Rice
Ingredients:
- 1 cup chicken mince or leftover roasted chicken breast
- 2 green onion
- 1 garlic
- 2 cups cooked rice
- 1 cup frozen peas and carrots
- 1 large egg ( optional)
- 1 tsp sesame Oil
- 2 tbsp coconut aminos or soy sauce
- salt and pepper to taste
Method:
Into a skillet, add some oil and fry the chicken mince or chicken breast. Remove the chicken from the skillet to a plate and cover to keep warm.
Pour a little oil to a pan and add in green onion, garlic, peas and carrots and saute for 1-2 mins. Once the vegetables are soft, pour the beaten egg in the center of the pan. Allow the egg to sit and cook for about 30 seconds before stirring throughout the vegetables.
Return the chicken to the pan, toss the cooked rice, and mix well. along with a splash of soy sauce and fry for about 5-10 minutes or until well cooked and set aside. Pour the coconut aminos over the top of everything. Stir to evenly season the dish. Add additional salt and pepper if necessary.
4. Fried Rice Recipe
Ingredients:
- 1 onion chopped
- 3 pods minced garlic
- ½ cup mixed vegetables
(Carrots, beans and cabbage) - 2 cups cooked rice
- Salt and pepper to taste

Method:
Into a frying pan, add some oil and fry the mixed vegetables until cooked and set aside. Then, into a cooking dish, add in 1 tbsp of oil and let it get heated. Then, add in the onions and let it fry until golden brown. Next, toss in the minced garlic and fry for a minute. Lastly, add in the cooked rice, the stir fried vegetables, some salt and pepper to taste and give it a mix. It is then ready to eat.
5. Ham Rice Recipe
Ingredients:
- 3 cups cooked rice
- 2 large eggs
- 1/2 cup frozen peas
- 1/2 cup carrot, diced
- 1/2 cup chopped ham
- Salt to taste
- 2 Tablespoons low-sodium soy sauce
- 4 tbsp Oil
- 1/8 cup chopped parsley leaves
Recipe:
Heat 1 tbsp of oil in a pan. Beat eggs in a bowl and add it to the pan. Stir gently until cooked and set aside. Add another tbsp of oil to a pan and saute the peas, carrots, and ham. Toss in the rice and cook for 1-2 mins. Return the eggs to the pan, and mix well. Add soy sauce and salt if needed and mix until well combined. Serve hot.
6. Pesto Rice Recipe
Ingredients:
- 2 cups cooked rice
- veggies – (baby spinach, frozen peas, bell peppers) or roasted chicken breast
- Salt to taste
- 1-2 tbsp Pesto sauce – recipe here
- Oil
Recipe:
Into a saucepan, add in 1 tbsp of oil and let it get heated. Then, add in veggies and stir fry for 2-3 mins. Next add in 1-2 tbsp of pesto sauce and saute for 45 to 60 seconds. Add in the rice and salt if required. Serve warm; leftovers will keep in the fridge for up to 2 days.
