1. Rotisserie Chicken Rice Bowl

Serves 1

Ingredients

  • 120 g rotisserie chicken
  • 1 cup cooked rice
  • 2 tbsp hummus
  • 1 cup mixed salad greens
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Salt & pepper

Method
Add rice to a bowl, top with chicken, hummus and salad, drizzle olive oil and lemon, season and serve.


2. Pesto Tortilla Wrap

Serves 1

Ingredients

  • 1 large tortilla
  • 2 tbsp pesto
  • 100 g shredded chicken or paneer
  • 2 tbsp grated cheese

Method
Spread pesto on tortilla, add filling and cheese, fold and toast on a pan until golden.


3. Buttery Egg Toast

Serves 1

Ingredients

  • 2 slices bread
  • 2 eggs
  • 1 tbsp butter
  • Chili flakes & salt

Method
Toast bread, fry eggs in butter, place on toast, sprinkle chili flakes and salt.


4. Frozen Dumpling Soup

Serves 1

Ingredients

  • 1½ cups water
  • 8 frozen dumplings
  • 1 tsp soy sauce
  • ½ tsp ginger powder

Method
Boil water, add dumplings, cook 5 minutes, stir in soy sauce and ginger.


5. Cottage Cheese Bowl

Serves 1

Ingredients

  • 1 cup cottage cheese
  • 1 tbsp olive oil
  • Salt
  • ½ cup cherry tomatoes

Method
Mix everything in a bowl and eat as is or with toast.

  • 2 cups tortilla chips
  • ½ cup canned beans
  • ½ cup shredded cheese

Method

  • 1 cup cooked rice
  • 2 eggs
  • 1 tbsp soy sauce
  • ½ cup frozen vegetables
  • 1 tsp oil

Method
Heat oil, scramble eggs, add rice, veggies and soy sauce, stir-fry 3–4 minutes.


9. Tuna Toast

Ingredients

  • 1 can tuna (drained)
  • 1 tbsp mayo
  • 2 slices bread
  • Salt & pepper

Method
Mix tuna and mayo, spread on toast, season and enjoy.
