Homemade Healthy Lemon Curd
Lemon curd is a very rich dessert topping or spread that can be prefect on toast, scones, biscuits or other baked goods.
Ingredients:
- 2 tbsp lemon zest
- ½ cup lemon juice
- 1 cup sugar or ⅓ cup raw honey
- ½ cup cubed butter or 1/4 cup coconut oil
- 6 egg yolk
Recipe :
Into a bowl placed on a double boiler, whisk together the egg yolk, lemon zest, lemon juice and sugar. Let the granulated mixture begin to melt and keep whisking till the sugar has melted completely.
Continue to cook this mixture on the double boiler, while stirring constantly with a wire whisk and the mixture starts to thicken.
Remove from the heat and whisk the butter into the curd. Strain the mixture to a bowl or container and place a cling wrap over surface of the curd, to prevent any film formation.
Place it in the refrigerator for around 2 hours to set and then it is ready to use.
Homemade Lotus Biscoff –
lotus biscoff spread can be used in your drinks, on your toast or pancakes or add a drizzle of it on your ice cream.
Ingredients:
- 250 grams Lotus Biscoff cookies
- 1.4 cup oil of choice
- ¼ cup sweetened condensed milk
- ½ tsp cinnamon powder
- ¼ tsp salt
- 2 to 3 tbsp milk (if required)
Recipe :
Into a mixer grinder, add in the Lotus Biscoff cookies and blend until the cookies turn into a fine powder. Then, add in the oil, condensed milk, cinnamon powder and salt and give it a good blend until it becomes a smooth and fine paste.
If it has become a spreadable consistency, it is ready to use, if not, you can add in a little milk and blend until you get the desired consistency and then store it in a container to use.
Homemade Healthy Caramel Sauce
this easy to make delicious sauce can be used in puddings and desserts, as a filling in candy bars, or as a topping in your ice cream and custard.
Ingredients:
- 1 cup sugar or coconut sugar
- 4 tbsp unsalted butter or 1 tbsp coconut oil
- ½ cup heavy cream or coconut cream
- 1 teaspoon vanilla extract
- 1 tsp salt
Recipe :
Into a medium or large sized saucepan (because the mixture foams up), add in the sugar and cream and stir until the sugar dissolves completely.
Keep stirring, on medium heat, until the mixture comes to a boil and you see that the color of the sugar has turned into a golden amber color.
Then, remove from the heat and whisk in the butter, little by little. The mixture will foam up, so be cautious during this stage.
Once the butter has melted fully, add in the vanilla extract and salt. Give it a stir and place back over the heat. Let it simmer for a few minutes and then remove from the heat and set it aside to cool completely before transferring it into a jar. It is ready to use.
Homemade Nutella
this nutella recipes is healthy and better than a store bought that can be used on top of a pancakes, croissant, waffle, crepe, or piece of toast.
Ingredients:
- 1 cup hazelnuts
- 1/3 cup cacao powder
- 2/3 cup coconut or date sugar
- 1 tbsp oil (coconut, hazelnut, avocado or any other oil of choice)
- 1 tsp vanilla extract
- pinch of salt
- 6 ounces semi-sweet chocolate ( optional)
Recipe :
Into a pan, roast the hazelnuts for 4 to 5 minutes on medium heat. Mix it from time to time. you will see that the skins start to loosen and then you can take it off the heat. Rub the hazelnuts together when cool, so to remove the skins and then toss them into a mixer and grind until you get a smooth hazelnut butter.
Then, add in the cocoa powder, sugar, vanilla extract, salt and oil and blend again until you get a smooth and fine mixture. You can melt some semi sweet chocolate and add it to make the nutella more richer and creamier.
Transfer into a container and it is ready to use. the homemade Nutella will last up to a month at room temperature.
Dulce de leche –
a thick and rich caramel sauce that is made with just one ingredient. You can use it over ice cream or sponge cake or you can make a simple caramel mousse by mixing dulce de leche with heavy cream.
Ingredients –
- 14 ounce can sweetened condensed milk
Recipe –
Take a saucepan and Place a small rag or old dishtowel at the bottom of the saucepan. Remove any label from the can of condensed milk and Place the can on top of the rag. Fill the pan with water and bring it to a boil.
Cook the sweetened condensed milk for 3 hours, adding more water every 15 minutes. after 3 hours, using a pair of tongs remove the can from the water and transfer the dulce de leche to an airtight storage container.
Hot fudge recipe –
this is the easiest hot fudge you can make at home with only 3 ingredients.
- ½ cup chocolate chips (milk, semi sweet, or dark)
- 1 can (14 oz) sweetened condensed milk
- ¼ cup unsalted butter
Healthy hot fudge –
- 3 tablespoons unsweetened 100% dark chocolate, chopped
- 1 tablespoon raw cacao powder
- 3 tablespoons coconut or date sugar
- 3 tablespoons full fat coconut milk
- ¼ teaspoon vanilla extract
- pinch fine himalayan salt
In a saucepan, melt in the butter and then slowly stir in the sweetened condensed milk and chocolate chips until the chocolate is all melted and has a smooth consistency. Remove from the heat and let it cool. Pour it into a air tight container.
To reheat the chocolate sauce, warm it in a saucepan over low heat while stirring constantly. ( do not boil).
