No time for a healthy and delicious breakfast in the morning? Well, how about just make your breakfast at night that you can just store in a sealed container in the fridge for up to 3 days or freeze them for up to 3 months and thaw them in the fridge the day before serving.
Here are delicious, heathy pancake recipes that are easy to make and can be made at night for a quick grab and go breakfast.
Cottage cheese pancakes
- 1 1/2 cups cottage cheese
- 4 eggs
- 2 tbsp coconut sugar
- 1/2 tbsp baking powder
- 1 cup flour
- 1 tsp vanilla extract ( optional)
Recipe – Add all the ingredients to a bowl and mix it really well. Heat a pan on high and add in some oil to it. Pour 1/4 cup of batter on the pan. cook it on both sides and serve with your favorite syrup.
Yogurt Pancakes
- 1/2 cup oats
- 1 egg
- 2 1/2 Tbsp yogurt
- 1 Tbsp honey
- pinch of baking soda
- 1 tsp vanilla ( optional)
Mix the egg with the yogurt, vanilla and honey in a small bowl and mix well. Grind the oats using a nut grinder or a food processor and add it to the bowl along with the baking soda. Let the batter rest for 5 mins.
Preheat a pan and add in some butter or oil. Pour the batter on a hot skillet and let it cook for 2-3 mins, flip and cook on the other side. Serve with honey or maple syrup.
Peanut butter pancakes
- 1 cup milk
- 1 egg
- ¼ cup peanut butter
- 1 cup wheat flour
- ¼ teaspoon salt
- 2 teaspoons baking powder
- ½ cup dark chocolate chip ( optional)
Recipe – Add all the ingredients to a bowl and mix well. Let the batter rest for 5 mins until you heat the pan. Pour 1/4 cup over hot skillet and cook for 2-3 mins. Flip and cook for 1-2 mins. Serve with homemade pancake syrup.
Mini Pancakes
Ingredients –
- 1 mashed banana
- 2 eggs
- 1/4-1/2 cup almond flour or any other flour (1/2-1 dl)
- 1/2 teaspoon cinnamon
Recipe –
Mix everything really well. You can use oats flour ( blend oats in a blender to get oats flour) instead of almond flour. Let your pancake batter sit for about 5 minutes while heating the pan.
Buttermilk pancakes
- 1 cup milk
- 1 tsp apple cider vinegar
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp sugar
- pinch of salt
- 1 tbsp oil
Recipe – Mix almond milk with vinegar and set aside for few mins to make buttermilk. Add all the dry ingredients to a bowl. Add in the buttermilk and oil and mix really until well combined.
Pour the batter on a well greased pan. Let the pancakes cook well. Take a peak underneath and if it is golden, flip to the other side. Cook about 30 seconds-1 minute on the other side.
