1. Banana Pancakes3 ingredients

Ingredients:

  • 1/2 cup Old-Fashioned Rolled Oats or wheat flour
  • ⅔ cup Almond Milk or 2 eggs
  • 1 large Ripe Banana 

Optional –

  • Cinnamon
  • salt
  • Vanilla extract

Method:

Into a high-speed blender, blend all the ingredients until you get a smooth batter. If the batter is too thick then add in some milk.

Heat a pan on medium flame and grease it with some oil. Use a 1/3 cup measuring up to scoop the batter onto the heated pan. Fry for 1-2 mins and flip until the pancake has well browned. Serve with some maple syrup or yogurt.

2. Potato Pancakes

Ingredients:

  • 4 large potatoes
  • 1 medium onion
  • 2 eggs
  • 1/4 cup rice flour
  • 1/2 tsp salt
  • 1/4 tsp pepper

Method:

Peel the potatoes and onion and grate them.

Place the potato mixture into a fine strainer or kitchen towel and try to squeeze almost all of the liquid into a mixing bowl. Discard the liquid. You’ll notice white powder on the bottom of the bowl after you pour the liquid out. It is potato starch and it gives texture to the pancakes, so you should keep it.

Return the potato mixture into the bowl and add eggs, and flour, with some salt and pepper, and mix everything well. Heat up some vegetable oil in a large, non-stick skillet over medium heat. Add a spoonful of potato mixture, spreading it slightly. Fry for about 2-3 minutes on each side, until the pancakes are crispy and brown.

Place the pancakes on a paper towel, to absorb the excess oil and serve.

3. Egg Pancakes – 3 ingredients

Ingredients:

  • 1 cup veggies of choice
  • 2 eggs
  • Salt and pepper

Method:

In a mixing bowl, add veggies like carrot, cabbage, spring onion, bell peppers. Add eggs, salt and pepper and give it a good mix.

Add some oil to a pan and place over medium heat. Once hot, add everything to a pan to make a thick single pancake. Cook for 2-3 minutes, remove the lid, flip, and cook for another two minutes. Serve with some tomato sauce.

4. Korean Vegetable Pancakes

If you are looking for a delicious and healthy breakfast, then try making these very yummy Korean pancakes or Indian cheela. These pancakes are super easy to make and are also very healthy, nutritious and rich in protein. Korean pancakes are made with all purpose flour but I used chickpea flour to add protein. Here is a simple recipe you can try today!

Ingredients:

  • 1/4 cup all purpose flour or chickpea flour
  • 1 cup veggies of choice – carrots, cabbage, bell peppers.
  • salt and pepper
  • 1/4 cup water

Take a grater and grate the vegetables. Mix all the ingredients in a bowl and pour it on a well greased pan. cook for 2-3 mins, flip and cook for another 2 mins or until crispy. Serve with a tomato ketchup or your favorite dip.

5. Chocolate Vegan Pancakes

Ingredients:

  • 1½ cups wheat flour
  •  2-3 tbsp powdered sugar
  • 1 tbsp cocoa powder
  • ½ tsp baking soda
  • A pinch of salt
  • 1 cup any milk of choice
  • Choco chips ( optional)

Method:

In a mixing bowl, add the flour, sugar, cocoa powder, baking soda, and salt. Give it a mix and then pour in the milk. Add in the Choco chips, Give it a mix until well combined. Let the batter sit for 5 minutes. 

Then, pour small dollops into a greased pan and flip sides until the pancake has been well browned.

6. Banana Pancakes2 ingredient

Ingredients:

  • 2 large bananas
  • 4 large eggs
  • 1/4 teaspoon baking powder (optional)

Method:

In a high-speed blender, add your bananas, eggs, and baking powder and blend until smooth. Next, pour small dollops into a well-greased pan over medium heat. After 1-2 minutes, flip the pancakes and cook for a further minute. Serve with some honey and fruits of your choice.
