Yes, from broccoli rice, to tomato rice, chicken rice to egg rice, there are multiple different recipes you can make and in this article, I’ve penned down 6 of my favourites!

1. Turmeric Veggie Rice Recipe

Ingredients:

  • 1 onion chopped
  • 3 garlic cloves – minced
  • 1/2 cup chopped veggies (broccoli, carrot, peas, green onion)
  • 2 cups cooked rice
  • Salt and black pepper to taste
  • 1/2 teaspoon turmeric
  • Oil

Method:

Into a cooking dish, add in 1 tbsp of oil and let it get heated. Then, add in the onions and let it fry until golden brown. Next, toss in the minced garlic, chopped veggies – carrots, frozen peas, bell peppers, broccoli and stir fry for 4-5 mins. Add in the turmeric, salt and pepper and sauté for 15 seconds. Finally add in the rice, give it a mix and its ready to eat.

2. Egg Rice Recipe

Ingredients:

  • 1 egg
  • green onion
  • 1 cup cooked rice
  • 2-3 teaspoon light soy sauce
  • Salt to taste
  • 1 cup mixed frozen vegetables
    (peas, cabbage, bell peppers) ( optional)
  • Oil

Method:

Add rice to a bowl along with an egg. Mix it really well.

Into a frying pan, add some oil and fry the green onion and mixed frozen vegetables until cooked. Next, add in the rice and keep mixing for a few minutes. Add some soy sauce. Sprinkle some salt to taste if required, mix and it is ready to eat.

3. Chicken Rice

Ingredients:

  • ½ cup chicken mince or leftover roasted chicken breast
  • 2-3 tsp light soy sauce
  • 1/8 cup chopped cilantro or parsley leaves
  • 1 cup cooked rice
  • 20 grams Frozen peas or sweet corn (optional)
  • eggs ( optional)
  • Oil

Method:

Into a frying pan, add some oil and fry the chicken mince or chicken breast ( you can also pour in 2 beaten eggs) along with splash of soy sauce and fry for about 5-10 minutes or until well cooked and set aside. Then, into a cooking dish, add in 1 tbsp of oil and let it get heated. Next, toss in the cooked rice, soy sauce, frozen peas, sweet corns, and chicken and give it a mix. Season with some salt required and add in the cilantro or parsley leaves. Remove from the heat and serve with chilli sauce.

4. Fried Rice Recipe

Ingredients:

  • 1 onion chopped
  • 3 pods minced garlic
  • ½ cup mixed vegetables
    (Carrots, beans and cabbage)
  • 2 cups cooked rice
  • Salt and pepper to taste

Method:

Into a frying pan, add some oil and fry the mixed vegetables until cooked and set aside. Then, into a cooking dish, add in 1 tbsp of oil and let it get heated. Then, add in the onions and let it fry until golden brown. Next, toss in the minced garlic and fry for a minute. Lastly, add in the cooked rice, the stir fried vegetables, some salt and pepper to taste and give it a mix. It is then ready to eat.

5. Lemon Rice Recipe

Ingredients:

  • 2 cups cooked rice
  • 1 tsp mustard seeds
  • ½ tsp cumin seeds
  • ¼ tsp turmeric powder
  • ¼ tsp all-spice powder
  • ¼ tsp coriander powder
  • Salt to taste
  • Oil
  • Juice of 1 lemon
  • 1/8 cup chopped coriander leaves

Recipe:

Into a cooking dish, add in 1 tbsp of oil and let it get heated. Then add in the mustard seeds and wait for it to splutter. When it does, add in the cumin seeds, fry for a few seconds and then add in the cooked rice. Sprinkle the turmeric powder, all-spice powder, coriander powder, some salt to taste and juice of one lemon. Give it a mix and its ready to eat.

6. Pesto Rice Recipe

Ingredients:

  • 2 cups cooked rice
  • veggies – (baby spinach, frozen peas, bell peppers) or roasted chicken breast
  • Salt to taste
  • 1-2 tbsp Pesto sauce – recipe here
  • Oil

Recipe:

Into a saucepan, add in 1 tbsp of oil and let it get heated. Then, add in veggies and stir fry for 2-3 mins. Next add in 1-2 tbsp of pesto sauce and saute for 45 to 60 seconds. Add in the rice and salt if required. Serve warm; leftovers will keep in the fridge for up to 2 days.
