Ingredients:

Chopped mango pieces
(Use fresh mango)

Corn flour

Coconut milk

Sweetener of choice

Lemon juice
(Optional)

Method:

Step 1: Take a mango, slice off the sides and scoop out the fresh mango pulp.

Step 2: Add the mango pulp/pieces into a blender along with the corn flour, coconut milk and any sweetener of your choice. Blend this well until it becomes a smooth paste.

Options for sweeteners: Honey, brown sugar, maple syrup, regular powdered or granulated sugar, stevia, date syrup etc.

Step 3: Pour this mixture into a pan and cook on low flame until it becomes semi-thick and creamy. Add in a few drops of lemon juice for flavour (this is totally optional) and mix it well.

Caution: Make sure to keep the flame low and stir continuously, failing which the corn flour thickens quickly and can make the dish lumpy.

Step 4: Pour this mixture into serving bowls and then refrigerate for 3 to 4 hours or until it sets. It is then ready to be consumed. Serve chilled for the best taste.

Plating/serving suggestion: You could invert the serving bowl into a plate, to flip the mango pudding before serving. This way, the mango pudding will look presentable for serving as a dessert.
