1. Vegan Cauliflower Alfredo Sauce
Ingredients:
- 4 large cloves garlic, minced
- 1 tablespoon butter
- 2 cups cauliflower florets
- 3 cups vegetable broth or water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup milk
Method:
Saute the minced garlic with the butter until fragrant and keep aside. Bring the water or broth to a boil in a large pot. Add the cauliflower and cook, covered, for 7-10 minutes or until cauliflower is fork tender. Do not drain.
Transfer the cauliflower pieces to the blender. Add 1 cup vegetable broth, sauteed garlic/butter, salt, pepper, and milk. Blend until smooth.
If the sauce starts to look dry, add a few drops of water, milk, or olive oil. Toss the alfredo sauce with cooked fettucine and serve immediately.
2. Alfredo Sauce with Cream Cheese
Ingredients:
- 1/2 cup unsalted butter ( 1stick)
- 6 cloves garlic (minced) or garlic powder
- 1/3 cup parmesan cheese (grated)
- 8 ounce cream cheese
- 1 cup milk
- 1/2 tsp pepper to taste
Method:
Into a saucepan, add the butter, cream cheese, milk, parmesan cheese, and garlic. Cover and cook on low until the butter and cream cheese have melted. Stir well and cook until it is hot and bubbly. Season to taste with the pepper. If using chicken or broccoli, stir into the sauce. Toss with cooked fettuccine until coated. Serve while hot. Sprinkle with fresh parmesan cheese and parsley on top, if desired.
3. Vegan White Sauce Alfredo Sauce
Ingredients:
- 1 cup cashews
- ¾ cup water
- Salt and pepper to taste
- Dried herbs to taste
- 2 tbsp vegan parmesan or nutritional yeast
- 2 cloves of garlic
- ½ cup onion (chopped)
- ½ tbsp lemon juice
Method:
Into a bowl, add in the cashewnuts and soak it in water, overnight or for 8 hours (let the water submerge the cashews). Next, drain the water from the cashews and transfer into a blender, along with the other ingredients – salt and pepper to taste, vegan parmesan, onion, garlic, lemon juice and water. Blend into a smooth paste, transfer into a bowl and season with dried herbs and its ready to use.
4. Alfredo Sauce with Heavy Cream
Ingredients:
- 1/2 cup butter
- 2 garlic cloves, minced
- 2 cups heavy cream
- 1/4 teaspoon white pepper
- 1/4 teaspoon salt
- 1 cup Grated Parmesan cheese
Method:
In a medium sauce pan over medium heat melt butter. Add garlic, cream, pepper, and salt. Bring to a low boil and reduce heat to medium low and simmmer for 8 minutes. Remove from heat and slowly add cheese. Return to stove on low and cook for 2 to 3 minutes, stiring constantly. Serve hot.
5. Classic Alfredo Sauce
Ingredients:
- 4 tablespoons unsalted butter, cubed
- 3 oz freshly grated parmesan cheese
- 8 oz fresh homemade pasta or sourdough pasta
- ½ cup of hot pasta water
- Salt and pepper

Start by adding the cubed unsalted butter to a large bowl or frying pan. Next, sprinkle half of the parmesan cheese over top of the butter.
