Savory Potato Pancakes

Savory Potato Pancakes – fried, crispy pancakes that are unbelievably tasty.

Ingredients:

  • 4 large potato
  • 2 eggs
  • 2 tbsp flour
  • 1 small onion ( grated)
  • salt and pepper

Method:

Beat eggs in a bowl, add the finely grated potato and onion. Mix in the flour and salt, pepper to taste. Pour 1/4 cup of the mixture into a well-greased skillet and flatten it well. Place 2 – 3 potato pancakes into the pan and cook for 3-4 minutes on each side or until they are golden and crispy.

Oats Pancakes – an easy-to-make savory oats pancakes.

You will need –

  • Rolled Oats – 1 Cup
  • Onion – 1 No.
  • Pepper or chilli flakes – 1/2 Tsp
  • Salt – 1/2 Tsp
  • Oil

Method: Take rolled oats in a bowl and add water to it. Soak the oats for 30 mins. After 30 mins, put the soaked oats in a mixer jar.
Add onions, salt, pepper powder or chilly flakes to the mixer jar. Grind it all well without adding water. Remove the batter from the mixer jar and add a little water if it is too thick. Heat a pan and apply oil. Take a ladle full of batter and pour on the pan make the pancakes. Apply ghee on the sides for added crispiness and flavor. Once the dosa is cooked on both the sides, remove it from the pan and serve it hot with some spicy tomato chutney or any other chutney of your choice.

Ham and cheese Pancakes

Ham and cheese Pancakes – Delicious protein-rich pancakes that are crispy and cheesy.

You will need –

  • flour – 1 cup
  • eggs – 1
  • Milk of choice – 1/2 cup
  • Ham – 1 cup
  • Cheese – 1 cup
  • shallots/ scallions – 1 cup
  • Salt and pepper
  • baking powder – 2 tsp
  • Oil or butter

Method – In a bowl, combine the flour, baking powder, salt and pepper. Make a well in the center and add in the eggs and milk, mix well. Add in cheese, ham, and shallots and stir to combine.

Heat a pan and apply oil to it. Pour 1/4 cup of batter in a pan. Cook for 2 mins or until golden brown. Flip and cook on the other side for 1 minute. Remove from the pan and serve with greek yogurt or sour cream.

Korean vegetable pancakes

Korean vegetable pancakes – make these delicious crispy pancakes.

Ingredients

  • 1/2 cup green onions
  • 1/2 cup potatoes  ( thinly sliced)
  • 1/2 cup onions ( thinly sliced)
  • 1/4 cup bell peppers ( thinly sliced)
  • 1/4 cup carrots  ( thinly sliced)
  • 1 tbsp green chilies 
  • 1/2 cup chickpea or all-purpose flour
  • 1/2 cup water, as needed
  • salt and pepper to taste.

Method – In a bowl, mix your vegetables and flour. Slowly add in your water until the vegetables are just coated, make sure the batter is not runny.

Heat a large skillet and add 1 tbsp oil. Add about 1/4 of your vegetable mixture and let it cook for 3-4 until golden brown. Flip it over. Press the pancake down with your spatula to ensure it browns evenly. Cook for another 3-5 minutes until golden brown.

Sweet potato pancakes – Looking for grain-free pancakes, make these easy pancakes using sweet potato.

Ingredients

  • 1/2 cup mashed sweet potato
  • 2 eggs
  • oil or butter for cooking
  • pinch of cinnamon
  • pinch of ginger
  • pinch of salt and pepper

Whisk together the sweet potato and eggs until well-combined. Add seasonings and stir. Heat oil or butter in a skillet. Pour 1/4 cup sweet potato mixture and cook for 3-5 minutes. ( Make small pancakes as they take longer to cook) Flip each cake and cook for an additional 3-5 minutes, until lightly golden brown on the outside and cooked through.
