Date Sugar
Preheat oven to 200F. Slice them in half and Line a baking pan with parchment paper. Lay the dates on the pan ensuring they do not overlap.
Bake for 60-90 minutes or until the dates are hard as a rock. They should be a dark brown but not black. Move dates around on baking sheet so they don’t stick and leave in oven with oven turned off for another 3 hours. They should harden.
Remove from oven and allow to cool. Using a very, VERY powerful food processor or spice/coffee grinder add a handful of the dates to the grinder and process until a powder forms.
Optional – Add a pinch or two corn starch or arrow root powder to each batch and process for a few seconds. This will help the sugar to not clump.
Continue with the rest of the dates. Store the sugar in an air tight container.
Date Syrup
Ingredients:
• 1 tightly packed cup dates, pitted (about 5oz or 150g)
• 3/4 cup hot boiled water
Recipe :
Add dates to a bowl. Cover with hot boiling water and soak
for 10 minutes. Place dates and the soaking water in a high-speed blender.
Blend for about one minute. Scrape down the sides of the jar
as needed. Stop blending when you have a smooth paste. Strain it through a strainer or cheese cloth and pour into a glass jar, and refrigerate until needed.
For thicker syrup – Pour the date juice back into the pot and simmer over medium-low heat until the syrup is reduced by about half. For the ideal consistency, the syrup should easily coat a spoon dipping in it. If the syrup is still too thin, continue reducing it, but keep in mind that it will thicken even more once refrigerated.
