1. Has your baking soda expired?
If you aren’t sure if your baking soda has expired, you can add in ½ teaspoon of baking soda into a cup of hot water. If it fizzes, it is good and if it doesn’t, it needs to be thrown away as it has expired.
2. The bottom of your cupcake turns brown
Place a baking sheet under your muffin/cupcake tin and then bake your muffins/cupcakes so that they do not turn brown at the bottom.
3. Prefect whipped cream
Chill your mixing bowl and whisk (yes, even those to your electric mixer) in the freezer for about 20 minutes before you start whipping to get as cold as possible. You’ll also want to make sure that your heavy whipping cream is as cold as possible, too. Add all of your ingredients into your super chilled mixing bowl and whisk together on high speed for about a minute until stiff peaks form. And you are done!

Using a sharp knife, slit the vanilla beans so the beans are exposed. Place beans in a jar. Pour vodka on top until the beans are submerged. Store vanilla at room temperature out of direct sunlight. Shake about once every couple weeks. Vanilla extract should be ready to use in 8 weeks, but for optimal flavor store it for at least 6 months before use.
5. Make cake or pastry flour at home
Just mix 1 cup of all purpose four with 2 tablespoon of cornflour. Remove 2 tablespoons from one level cup of all-purpose flour, then add 2 tablespoons of corn flour to the flour. This will give you one cup of cake flour.
- Sift well together before using. Label an airtight container with the name and date so you remember what it is and when you made it. Use within 8 weeks.
6. Make self rising flour –
For every 1 cup of all-purpose flour, add 1 1/2 teaspoons baking powder and 1/4 teaspoon fine salt. Whisk the ingredients thoroughly in a large bowl or put them in a glass jar.
7. Make your own powdered sugar
To make powdered sugar at home, you’ll need two ingredients: granulated sugar and cornstarch. Use 1 tablespoon cornstarch for every cup of sugar.

To quickly bring eggs to room temperature add them to a bowl of warm water.

Add 1 large egg to the small bowl of a food processor and process for 20 seconds. Add 1 tbsp of mustard, 1 tbsp vinegar, and 1/4 tsp salt. Process for another 20 seconds. When you notice that the mixture is beginning to thicken and emulsify, add in the 1 cup of oil little by little.
