zucchini bread

Delicious Bread Recipes

1. Zucchini Bread

Ingredients:

1.5 cups all-purpose flour

½ tsp salt

½ tsp baking powder

½ tsp baking soda

½ tbsp cinnamon powder

2 medium sized eggs

½ cup oil

1 cup sugar

1½ tsp vanilla extract

1 cup grated zucchini

Method:

Into a mixing bowl, add in the eggs and oil. Mix well. Next, add in the sugar, salt, cinnamon powder and vanilla extract and mix. Thereafter, fold in the all-purpose flour, baking soda and baking powder. Mix to combine, do not over mix. Lastly, add in the grated zucchini and fold it , to combine. Transfer into a baking tin lined with parchment paper and bake in a pre-heated oven at 350 degrees for about 45 minutes (or until a poked toothpick comes out clean).

2. Sweet Potato Bread

Ingredients:

1¾ cup refined flour

1½ cups sugar

½ cup oil

2 large eggs

1 tsp baking soda

½ tsp cinnamon powder

½ tsp nutmeg powder

¼ tsp of salt

1/3 cup water

1 cup boiled and mashed sweet potatoes

Method:

Into a mixing bowl, add in the eggs, oil and water. Mix well. Next, add in the sugar, salt, cinnamon powder and nutmeg powder and mix. Thereafter, fold in the all-purpose flour and baking soda. Mix to combine, do not over mix. Lastly, add in the mashed sweet potatoes, mix to combine and transfer into a baking tin lined with parchment paper and bake in a pre-heated oven at 350 degrees for about 45 minutes (or until a poked toothpick comes out clean).

 Carrot Bread

3. Carrot Bread

Ingredients:

1 cup all-purpose flour

½ cup sugar

¾ tsp baking soda

¾ tsp cinnamon powder

½ tsp salt

A pinch of pumpkin spice powder (optional)

½ tsp vanilla extract

1/8 cup milk

90 ml oil

2 medium sized eggs

1¼ cup grated carrot

 Method:

Into a mixing bowl, add in the eggs, oil and milk. Mix well. Next, add in the sugar and mix. Thereafter, fold in the all-purpose flour, baking soda, cinnamon powder, salt, pumpkin and spice powder. Mix to combine, do not over mix. Lastly, fold in the grated carrot and add in the vanilla extract. Mix and transfer into a baking tin lined with parchment paper and bake in a pre-heated oven at 350 degrees for about 30 minutes (or until a poked toothpick comes out clean).

4. Pumpkin Bread

Ingredients:

1 cup all-purpose flour

A pinch of salt

¼ tsp baking powder

½ tsp baking soda

1 large egg

1 cup sugar

210 grams pumpkin puree

80 grams softened butter

1½ tsp all-spice powder

Method:

Into a mixing bowl, add in the egg, butter and pumpkin puree and mix well until combined. Then, add in the sugar and mix well. Lastly, sift in the all-purpose flour, salt, baking powder, baking soda and all-spice powder and mix to combine, do not over mix.

Transfer into a baking tin lined with parchment paper and bake in a pre-heated oven at 325 degrees for about 35 minutes (or until a poked toothpick comes out clean).

Banana Bread

5. Banana Bread

Ingredients:

3 overripe bananas (mashed)

1 cup sugar

1 egg

¼ cup butter (melted)

1½ cups refined flour

1 tsp baking soda

1 tsp salt

Method:

Into a mixing bowl, add in the mashed banana, along with the butter and egg and mix well until combined. Then, sieve in the refined flour, baking soda and salt. Mix to combine, do not over mix.

Transfer into a baking tin lined with parchment paper and bake in a pre-heated oven at 325 degrees for 45 minutes (or until a poked toothpick comes out clean).
